Paneer is Indian Cottage Cheese and used extensively as a core ingredient in curries and stir-fry indian dishes such as Saag or Palak Paneer, Paneer Makhni etc.
The main ingredients are cows milk and lime juice or vinegar (used to separate the milk solids from the whey).
Paneer is increasingly used by vegetarians as a substitute to meats (it has a high protein content ~17%). For example Paneer Makhni is the same gravy as the butter Chicken Sauce but Paneer is substituted for Chicken.
